The grapes, mainly Sangiovese Grosso, are hand-selected and undergo strict quality checks, so that only the best harvests are transformed into fine wines in our Vinification room. Here, 100 hl stainless steel tanks host the fermentation process, where the grapes are paired with natural yeasts carefully selected from the Cordella vineyards. This fusion of nature and technology gives life to organic wines which capture the history and the authentic flavours of the Tuscan land.
Brunello di Montalcino DOCG and Rosso di Montalcino DOC, two of our finest wines, are aged in 25 hl oak barrels coming from the famous Allier forests in France. The Barrels undergo a delicate medium-toast process, which gives the wine unique balance and smoothness.
In the two halls that host the Allier Barrels, we also store precious Barriques for the aging of our Brunello di Montalcino “Vigna Meleto” selection, the crown jewel of our production. In order to ensure optimal readiness and the perfect maturation of aromas and flavours, our wine aging process exceeds the standard parameters. In fact, Brunello di Montalcino is aged for 8 months while Rosso di Montalcino for 4 months.
Sustainability is a core value for us: the Winery was built with environmental consciousness, with the implementation of water and energy-saving technologies which earned us the ISO 14001 environmental certification from TUV Austria.
